Sock Eye Salon & Grilled Kale Salad
People say being healthy and making good food choices is simple. Logically, sure it is. It’s EASY! to think about it…but to actually consciously make the decision to eat better takes EFFORT. Now do the words easy and effort really coincide? No. It is easy to go to the drive thru. It is easy to reach for a frozen dinner. It takes effort to turn go to the grocery store, pick the right food, come home, turn on the stove, cook …you see where I’m going here. THAT takes effort, and unless you’re willing to put in effort to this thing called HEALTH, then forget it. Go with what’s easy. It’s okay. Give yourself permission to just make it easy on yourself. How far has that gotten you?
So if you’re willing to put in a little effort, then you’ll dig this dish.
Do you have a BBQ grill? If not you can use the oven, or foreman but salmon is best grilled. Throw some rub or spice of your choice, then throw the sock eye on the grill. I like my salmon medium well, so keep it on the grill for about 10-12 minutes.
Now for the kale salad: put about 2 teaspoons of coconut oil (use only extra virgin) on a pan, LOW heat. Sauté your kale until soft. While you’re doing that slowly add some slivered almonds and slivered coconut. Then add some blueberries. This should only take you about 5-7 minutes max.
VOILA! It’s a simple recipe that is easy to make, but it takes effort to get all those ingredients to the kitchen, and remember a conscious EFFORT to make this healthy dish and all the other healthy meals you eat during the week.
