Fruity Choco Cakes

Anyone who knows me, knows I have a slight obsession with all things chocolate and all things sweet. Not exactly a recipe for success when you’re on a mission to be as healthy as possible! BUT, there is a but…because I always find a way to incorporate my sweet tooth cravings into my recipes when possible. I love pancakes. I love chocolate. And I like so many people in this world, love sugar. Sugar however is downright terrible for your body. In moderation, everything is okay. So with that, I want to share with you my new protein pancake recipe. On my website you’ll find several variations of protein pancakes. Depending on the time of year, I’ll indulge in pumpkin, chocolate and vanilla pancakes for breakfast. Only difference is they are much healthier for you than what you’ll find in a box at the grocery store or at a national food chain.

While you may not think these pancakes will satisfy your taste buds, I have been experimenting with different ingredients to make sure they meet my standards, and I have high standards ha!

Today I added a new ingredient to the mix. GREEK YOGURT. Yogurt is packed with protein so it definitely qualifies as an approved protein pancake ingredient. Other recipes you’ll find for protein pancakes will have oat flour or other ingredients that typically have gluten or are full of carbs. If you’re trying to simply have a protein packed breakfast like I am, then try my recipe. I promise it won’t disappoint especially with this new added ingredient, which has made my pancakes especially moist. I wanted to make sure my protein pancake recipes stay true to their claim: healthy. 95 % healthy!

The recipe:

In a small bowl add two egg whites and your protein powder of choice. I prefer FIT 4 HER chocolate protein. It has chia seeds and probiotics which helps with my digestion. If you want to try it out, I’ve got a link to the protein powder under the SHOP section on my website. Make sure you type in FITCHICK when purchasing so you can get 10% off. If you have a favorite protein powder of your own, you can use that too! I just hope the ingredients are all natural. Make sure you read the back label always.

Mix those two ingredients, then add greek yogurt of choice. I used Chobani today, and no it’s not fat free. I don’t buy fat free products. A woman’s body needs fat. I add about 2 tablespoons of yogurt to the mix. Whip up and add a dash of blueberries and sliced strawberries to the mix

In a small saucepan, add coconut oil (a small dollop) just enough to coat the pan. Keep your stove top on about medium, but be forewarned that because there is yogurt in the mix your pancake will burn easily if you’re not careful. Flip the pancake back and forth until toasted.

Plate your pancake and add a scoop of almond butter (I use raw and organic) or peanut butter. For today’s pancake I used raw almond butter. Spread it all over your pancake and then for taste, add some organic maple syrup. I use about a tablespoon which is plentiful. It only has 50 calories (if you’re a calorie counter, which btw I’m not) but I know many people count their calories if they are on a strict weight loss plan.

Again, the caloric intake on a pancake like this is about 300-350 calories depending on what nut butter you use, and how much syrup you pour on top. That is the only ingredient that makes this pancake only 95% health and not 100%. Live a little! Don’t cheat yourself of the syrup unless you’re eating protein pancakes like this everyday and trying to lose weight or stay healthy, then I suggest you cut it out.
