Pumpking Protein Pancakes

Ever since I’ve embarked on the journey of getting fit, strong and healthy…I’ve found a new passion: FOOD. Just like you, I love hamburgers, fries, ice cream, pancakes …surely there’s a way to satisfy my cravings while eating healthy right? RIGHT. For the most part. I’ve been experimenting, and the latest recipe I’ve fallen in love with is PUMPKIN PROTEIN PANCAKES.
It may “sound” disgusting but they are delicious. I’ve attached some pictures to give you an idea of how delectable they are. Here’s something I should point out …if you aren’t lifting and you’re trying to lose weight, these aren’t for you. However if you just want a healthier option for pancakes and don’t have any fitness goals, you’ll find these satisfying too. If you ARE lifting, these are best consumed after a heavy workout because while there’s protein in them, they’re heavy in carbs which is fine as long as you’re not sedentary the day you eat up the pancakes.
Anyway, here’s the recipe if you’re interested. Sorry it took me a minute to post…
Breakfast recipe for the Fall: Pumpkin Protein Pancakes:
1. 1/2 can of coconut milk
2. 1/2 can of organic pumpkin
3. 1 cup gluten free Oat Flour
4. Cinnamon to taste
5. Baking soda (just a pinch)
6. 3 whole eggs
7. coconut sugar (if you must and yes I did but no necessary)
8. One whole banana
9. 40 g vanilla protein powder (if you have questions about where to get great protein powder, male or female – let me know) By the way if you don’t add in #9 on this list, then you have just sugary carb-loaded pancakes!
A. Mix all of the above ingredients in a blender
B. Coat pan with coconut oil and make the most succulent protein packed pancakes ever!
