Pumpkin Protein Bread

I’ve been obsessed with everything pumpkin lately. It is fall after all! And it’s OCTOBER! So this recipe is honestly perfect for people who are health conscious, but still want to experience the holidays like everyone else. Honestly this is the time of year when people fail at their fitness goals. You CAN enjoy good food, but my road to health has taught me one important rule: CONSISTENCY IS KEY. If you’re not consistent, you won’t see the desired results. Also, my journey is not about being thin. “THIN is NOT in.” I discovered that if I just focused on being “healthy”, then the physique will come naturally.

So for those of you who train, this carb packed protein bread can be eaten after a workout. My fitness guru tells me you’re body will burn it immediately. For those of you just looking for a healthier option to the sugar packed pumpkin bread recipes out there, THIS IS IT! And don’t worry, you wont’ sacrifice taste (hardly) or moisture. This loaf of bread is deliciously moist. I scarfed down two slices; the rest went into someone else’s belly. It disappeared in less than an hour.

RECIPE BELOW

“Protein Pumpkin Bread”

DRY Ingredients:

1. One cup of OAT FLOUR

2. Two scoops of vanilla PURE protein (ask me if you want details about the brand and I will send you the information)

3. 1/4 teaspoon of sea salt

4. 1/2 teaspoon of baking soda

5. 1 tablespoon of cinnamon

WET Ingredients:

1. One cup of Organic Pumpkin (the stuff you use to make pumpkin pie)

2. One cup of Organic Applesauce (this replaces SUGAR which is tisk tisk very bad for you!)

3. Three eggs

First step: combine all dry ingredients in a bowl. Then combine all your wet ingredients in a separate bowl (make sure this one is a little bigger) Slowly pour dry contents into your bowl with wet ingredients and whisk away! Pour the mix into a bread baking dish, pictured below. Instead of using butter or PAM, I actually line the pan with coconut oil.Put the pan in the oven at 350 degrees and bake for 40-45 minutes. I would check it after 20 minutes to make sure…some peoples’ ovens heat differently. Mine took about 45 minutes to bake.

When you’re done, take it out of the oven, slice it up and put it on a pretty plate. Voila!
