Almond Butter Bars

While these treats are NO BAKE (no oven necessary), patience is KEY. They hardly take any time to whip up, but the finish product has to sit in the freezer for a bit.

It’s a two step process.

Here’s a look at the DRY ingredients: 1. Four tablespoons of pure Maple Syrup 2. Two whole bananas 3. 1/2 cup of cocoa powder 4. 20 large pitted dates (I used DOLE) 5. 1 teaspoon of vanilla extract (I use organic) 6. 1 1/2 cups of almond meal

Your WET ingredients: 1. 1/3 cup of coconut oil 2. 1/2 cup of almond butter (I use Justin’s …it’s organic) 3. 1/4 cup of maple syrup 4. 1/2 teaspoon of vanilla extract (same as above) 5. 1/2 cup of slivered almonds (I bought a tiny pack of the DIAMOND)

I bought all my ingredients from Harmon’s. I think you should be able to find a version of all the ingredients however at any grocery store. The photo on the top left of this collage are the ingredients, to the right is the mix. Make sure you put that in a high-intensity blender. I use the NINJA. It works great. You can add a few tablespoons of water to soften the mix a bit, but not TOO MUCH or else the mix will be TOO MOIST. The bottom left picture is the mix spread out on a pan. Stick that immediately in the freezer for 30 minutes while you mix your wet ingredients, which is the topping to this treat. The bottom right picture is a mixture of your WET ingredients in a small saucepan. On low, stir the wet ingredients for about 4 minutes. Put it to the side and let it cool off, while your pan sits in the freezer.

After 30 minutes, take your pan out and carefully pour your SPREAD on top! Stick it in the freezer for 60 minutes. Then take it out, slice it up, put it in a pretty plate and VOILA!

Once you’re done snacking, wrap and cover your Almond Butter Bars and put them back in the freezer to enjoy later…

The secret ingredient to making sure these taste extra sweet is: LOTS OF LOVE
